Charred Watermelon & Buffalo Mozzarella Salad

Floridia Buffalo Mozzarella made from Australian Buffalo milk is smooth and creamy with a slightly salty yet gentle tang. Sold in brine filled tubs to maintain freshness, it is ideal marinated in extra virgin olive oil and herbs served with crusty bread. Slice it on pizza or add to antipasto platters or salads.

  • 2 cheeks of buffalo mozzarella
  • 3 slices of firm watermelon roughly 10x5x2cm
  • 5 radishes thinly sliced
  • 1 cucumber thinly sliced
  • 3-4 basil leaves roughly chopped
  • 2 tbsp extra virgin olive oil
  • 1 tsp black sesame
  1. First we are going to heat a griddle pan or thick based frypan on medium/high. Once it is hot, baste your watermelon slices with 1tbsp olive oil and cook for 1 minute on each side until you have nice charred marks on your fruit.
  2. Assemble your salad ingredients on the base of a platter or two plates.
  3. Place down the charred watermelon and whole/sliced buffalo mozzarella.
  4. Finally, garnish with black sesame, basil leaves and a drizzle of olive oil.

Note: this salad is so quick, healthy, easy and an impressive dinner party option. You can prepare the platter beforehand and at the last minute cook the pre-cut watermelon, garnishing quickly so that you get to spend more time with your guests.
