Green Salad with Parmesan Crunch

Floridia Parmesan is a hard drum shaped wheel cheese, manufactured naturally from fresh pasteurized cow’s milk. This cheese is aged up to two years and is consistent with sharp flavours. The more mature the parmesan, the stronger the flavour, and the drier, crumblier and grainier the texture. The distinctively salty, slightly granular cheese and hard body makes it ideal for grating and sprinkled over pizza and pasta dishes or stirred into soup or risottos. Try serving it as parmesan shavings in a salad or make it the feature of a cheese board. Just don’t serve it straight from the fridge — take it out an hour or so beforehand, unwrap it and let it breathe to accentuate its aroma and flavour.

Ingredients
  • ½ cup (60g) finely grated FLORIDIA CHEESE Parmesan
  • 1/3 cup olive oil
  • Finely grated rind of 1 small lemon
  • 1 large clove garlic, crushed
  • Pinch salt
  • 175g ciabatta, torn into 1-2cm pieces
  • ¼ cup olive oil, extra
  • 1 tablespoon white wine vinegar
  • 2 teaspoons wholegrain mustard
  • ½ teaspoon sugar
  • Salt and pepper, to taste
  • ½ large fennel bulb, shaved
  • 2 spring onions, cut into thin, diagonal slices
  • ½ iceberg lettuce, cut into 1cm thick wedges
  • 500g green beans, cooked until just tender and cooled a little
  • FLORIDIA CHEESE Parmesan, extra, grated
Method
  1. In a large bowl, mix together the Parmesan, olive oil, lemon rind, garlic and salt. Add the ciabatta and toss to coat. Transfer to a baking tray large enough to not be crowded. Bake in a 180OC oven, tossing occasionally, for 20-25 minutes or until golden and crunchy. Cool on paper towel on a wire rack.
  2. Combine the extra oil, vinegar, mustard, sugar and seasonings in a bowl. Add the fennel and spring onion and set aside.
  3. Arrange the lettuce wedges on a serving platter. Toss the beans in the fennel mixture and then transfer, including the dressing, to the lettuce platter. Scatter over some of the Parmesan crunchies, finish with a grating of Parmesan and serve the remainder of the crunchies alongside.
