Ingredients
  • 300g Floridia’s Fresh Pecorino
  • 1 egg lightly whisked
  • 100g plain flour
  • 3 tbsp olive oil
  • 3 fresh figs
  • Walnut sourdough
  • 1/2 cup toasted walnuts
Method
  1. Cut a 300g wedge of fresh pecorino and coat it in the egg wash, then follow with the plain flour. Dust off any excess flour.
  2. Heat a non stick pan and add the olive oil, carefully placing the cheese into the pan. Keeping the heat on low-medium, cook on each side until your cheese is golden brown. Roughly 1 minute each side.
  3. Using a flat spatula, transfer your deliciously melted cheese wedge onto a serving board with your choice of toasted sourdough, figs, walnuts & prosciutto if you like meat.

Note: You could use gluten free flour and bread if you or one of your guests had an intolerance.

I used Noisette’s walnut sourdough, but any type of sourdough or rye would go perfectly.
Serving this platter with fresh prosciutto is a great addition as well as any other of Floridia’s soft or hard cheeses. Just have fun with it and cater to your tastebuds, you’re going to love the melted pecorino.
