Eggplant Parmigiana

Floridia Parmesan is a hard drum shaped wheel cheese, manufactured naturally from fresh pasteurized cow’s milk. This cheese is aged up to two years and is consistent with sharp flavours. The more mature the parmesan, the stronger the flavour, and the drier, crumblier and grainier the texture.

Ingredients
  • 2 large firm eggplants
  • 1/2 to 3/4 cup of grated or shredded Floridia parmesan cheese
  • 1 punnet of cherry tomatoes
  • 1/4 cup seedless kalamata olives halved
  • 2 tbsp extra virgin olive oil
  • 1 small brown onion diced
  • 1 tsp freshly minced garlic
  • 1 celery stalk finely chopped
  • 1 small carrot grated
  • 1/4 cup red wine
  • 750ml tomato passata
  • 1 can of diced organic tomatoes
  • 8 stalks of parsley, no leaves
  • 1/2 cup basil leaves roughly chopped
Method
  1. First we have to make the red sauce. In a medium size pan, heat the olive oil frying off the onion, celery and garlic until translucent, add the carrot and cook for 3-4 minutes.
  2. Next put in ¼ cup red wine and cook off for 4 further minutes. Add the parsley stalks, diced tomatoes and tomato passata. Season with pepper and salt, bring to a simmer and cook on low until your sauce has reduced by ½. Making sure to stir occasionally as to not burn the bottom. Once it is done remove the parsley stalks and discard.
  3. To prepare the eggplants, slice them lengthways either with a mandolin or sharp knife, roughly 5mm thickness. Coat the eggplant with olive oil either using olive oil spray or a basting brush and cook on a griddle pan, season with salt. Before you turn off the griddle pan, toss the punnet of cherry tomatoes in olive oil and a little salt then cook for 2-3 minutes on the hot surface to blister and cook them lightly.
  4. To assemble, layer sauce, eggplant, a few olives cherry tomatoes, and cheese. Repeat until you have used all of your delicious ingredients, topping with the remainder of parmesan. Garnish with basil leaves and olive oil.
