Fresh Pecorino Scrambled Eggs

Floridia Fresh Pecorino is a natural cheese made from fresh pasteurized cow’s milk. This cheese is mild in flavour, white in appearance with a moist firm body. Great for grilling or frying and in salads or with vegetables. Also makes an ideal fresh table cheese.

  • 8 eggs
  • ¼ cup water
  • 40g butter
  • 1¼ cups (125g) grated FLORIDIA CHEESE Fresh Pecorino
  • ¼ cup 1cm long snipped chives
  • Bread or toast, for serving
  • FLORIDIA CHEESE Fresh Pecorino, extra, shaved, for serving
  • Chives, extra, for garnish
  1. Whisk together the eggs and water. Melt the butter in a non-stick frypan over moderately low heat. Pour in the eggs, scatter over the Pecorino and chives and cook for 2-3 minutes, stirring gently until the eggs have formed soft curds. Remove from the heat and stand for 1 minute for the eggs to finish cooking in the heat of the pan. Serve with bread, topped with shavings of extra Fresh Pecorino and garnished with extra snipped chives.
