Floridia Mascarpone is a coagulated cheese made from fresh pasteurized cow’s milk. Mascarpone is milky white in colour and is an excellent alternative to double cream in both sweet or savory dishes. Floridia Mascarpone has a thick spoonable texture and is extremely versatile, can be used to thicken and enrich risotto and in Italian desserts such as the very popular Tiramisu.
Note: These petite meringues, made ahead and later topped with a billowing spoonful of scented Mascarpone cream, will be enjoyed by everyone! Try using honey, or orange liqueur, instead of elderflower cordial if preferred. Makes 12 small meringues.
