Casalingo Cheese and Tomato Tart

Floridia Casalingo is a natural cheese made from fresh pasteurized cow’s milk. Casalingo has a semi-soft texture with a creamy firm consistency, yellowish rind and a pale yellow body. This cheese is sweet and delicate in flavour and is the perfect companion with cured meats, fig jam and honey.

Ingredients
  • 250g shortcrust pastry
  • 200g FLORIDIA CHEESE Casalingo, cut into 3-4mm thick slices
  • 200g tomatoes, cut into 3-4mm thick slices
  • 4-5 black olives, pitted and sliced
  • 2 teaspoons thyme or oregano leaves
  • Olive oil, for drizzling
  • Salt and pepper, to taste
Method
  1. Preheat a baking tray in a moderately hot oven 190oC.
  2. Meanwhile, roll out pastry to 3-4mm thickness and use it to line a lightly oiled 34cm x 12cm tart pan. Place cheese in a layer on the pastry and then arrange a layer of tomato on top. Scatter over olives and thyme, drizzle with oil and season.
  3. Bake on the preheated tray for 30 minutes or until the pastry is cooked and the cheese is golden. Serve warm or cool.

Note: Casalingo is a favourite cheese to eat fresh or cooked. Try this tart when tomatoes are at their best! You may substitute rounds of grilled eggplant for the tomato if preferred. Serves 4 as a light main courseServes 4 as a light main course
