Broccolini & Pecorino Pepato Tart

Floridia Pecorino Pepato is a natural cheese manufactured from fresh pasteurized cow’s milk. This cheese is a drum-shaped wheel and distributed throughout are whole black peppercorns, firm in texture with a hard body. Pepato is matured for a minimum of 4 months, where it develops its characteristic spicy taste. It is an exciting alternative to the more common Pecorino. The salty, tangy citrusy flavours complemented by the spiciness of the peppercorns make this cheese a great table cheese. Shave it on salads or fresh beans or pastas or grate into polenta or to top risotto.

Ingredients
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 75g baby spinach leaves
  • Finely grated rind of ½ lemon
  • 12-14 sheets filo pastry
  • Olive oil, extra, for brushing
  • 1½ cups (140g) grated FLORIDIA CHEESE Pecorino Pepato
  • 1 bunch (200g) broccolini, cooked until just tender
  • 3 eggs
  • 300ml thickened cream
  • Roasted cherry tomatoes on the vine, for serving, optional
Method
  1. Preheat a baking tray in a 180oC oven.
  2. Heat the oil in a frypan and cook the onion for 2-3 minutes or until softened but not coloured. Add the spinach and toss to wilt and evaporate any moisture. Remove from heat, add lemon rind and set aside to cool a little.
  3. Brush a sheet of filo pastry with olive oil and place into tart pan with approximately 3 cm overhang. Repeat with all the filo, sheet by sheet, and working around the pan, to make an even thickness of pastry.
  4. Spoon the spinach mixture into the tart and scatter with half of the Pepato. Arrange the broccolini on top. Whisk together the eggs and cream and pour over the broccolini, and then sprinkle with remaining cheese. Trim pastry edges or loosely roll up overhanging pastry to make the pie “crust”.
  5. Bake, on the preheated tray in a 180oC oven, for 35-40 minutes or until cooked through and golden. Serve warm or cool, with tomatoes if desired.
