Ricotta and Spinach Pasta Rotolo

Floridia Ricotta is a creamy white, mild, fresh cheese with a soft texture and a slightly sweet flavour. Made the traditional Italian way, Floridia Ricotta is manufactured from the whey produced in the making of Mozzarella and Pecorino. Ricotta can be eaten as is with a little salt, pepper and fresh herbs, although it is more commonly used in Italian pasta dishes and desserts. It is delicious in salads, dips or with Prosciutto and melon. Ricotta is a favourite in Lasagna, Cannelloni, Manicotti and in all filled pastas such as Ravioli and Tortellini. As a dessert cheese, Ricotta works well with honey, fruit, or chocolate as in Cannoli, and makes an excellent low-fat addition to cheesecake recipes.

Ingredients
  • Ricotta and Spinach Pasta Rotolo
  • 1 cup (100g) grated FLORIDIA CHEESE Traditional Mozzarella
  • 1/3 cup (35g) finely grated FLORIDIA CHEESE Parmesan
  • 250g frozen spinach, defrosted
  • 2 zucchini, coarsely grated
  • 1/3 cup pine nuts, toasted
  • ¼ teaspoon freshly ground nutmeg
  • Salt and pepper, to taste
  • 5 (225g) fresh lasagne sheets, approx. 30cm x 15cm each
  • 700g bottle basil passata
  • 1 cup water
Method
  1. In a large bowl combine the Ricotta, half of the Mozzarella, half of the Parmesan, the spinach, zucchini, pine nuts, nutmeg and seasonings.
  2. Lay out the lasagne sheets and divide the Ricotta mixture between them. Spread the Ricotta, beginning at a long edge, over ¾ of each pasta sheet. Roll up, from the long edge, to enclose. Cut each roll into 4½ -5cm long pieces. Pour most of the passata into an oiled baking dish (E.g. 27cm x 20cm), and stand the cut lasagne rolls in it. Rinse the bottle with the water and gently pour around the pasta. Scatter over the remaining Mozzarella and Parmesan.
  3. Bake in the lower half of a moderate oven, 180OC, for 35-40 minutes or until cooked and golden.

Note: Here we have that favourite combination of ricotta and spinach in an easy-to-prepare baked pasta dish we think you’ll love! If you prefer a softer rather than crisper top to the pasta, make sure to cut the rolls shorter so they are more submerged in the passata for cooking. Serves 4-6 as a main course.
