Gnocchi di Pane with Ricotta

Floridia Ricotta is a creamy white, mild, fresh cheese with a soft texture and a slightly sweet flavour. Made the traditional Italian way, Floridia Ricotta is manufactured from the whey produced in the making of Mozzarella and Pecorino. Ricotta can be eaten as is with a little salt, pepper and fresh herbs, although it is more commonly used in Italian pasta dishes and desserts. It is delicious in salads, dips or with Prosciutto and melon. Ricotta is a favourite in Lasagna, Cannelloni, Manicotti and in all filled pastas such as Ravioli and Tortellini. As a dessert cheese, Ricotta works well with honey, fruit, or chocolate as in Cannoli, and makes an excellent low-fat addition to cheesecake recipes.

Ingredients
  • 130 grams Floridia ricotta
  • 200 grams stale bread, preferably sourdough
  • 200 grams fresh milk
  • 85 grams semolina flour
  • 30 grams parmesan cheese
  • 1 whole egg
  • Salt and pepper to taste
Method
  1. Soak the bread: Cut the stale sourdough bread into small pieces and soak it in the milk for about 2 hours.
  2. Prepare the tomato sauce: In the meantime prepare a simple tomato salsa by cooking half an onion and one garlic clove into some extra virgin olive oil. Add 500 grams of tomato passata and cook for about 20 minutes.
  3. Prepare the eggplant: Dice one eggplant in small cubes and gently fry it in vegetable oil until it start browning. Strain and dry on paper towels.
  4. Make the gnocchi mix: After about two hours, mix all the remaining gnocchi ingredients in a bowl and add salt and pepper to taste.
  5. Pipe the gnocchi: Place the mix in a piping bag and pipe out small gnocchi into boiling salted water and cook them until they float.
  6. Assemble the gnocchi: Place the gnocchi in a serving bowl, and top with the tomato salsa. Finish with the fried eggplant and a generous amount of grated Floridia ricotta salata.

    Note: If you do not have stale bread, you can use fresh bread or you can simply substitute the bread with more Floridia ricotta. Serves 4.
