Frangelico Mascarpone Mousse

Floridia Mascarpone is a coagulated cheese made from fresh pasteurized cow’s milk. Mascarpone is milky white in colour and is an excellent alternative to double cream in both sweet or savory dishes. Floridia Mascarpone has a thick spoonable texture and is extremely versatile, can be used to thicken and enrich risotto and in Italian desserts such as the very popular Tiramisu.

  • 250g FLORIDIA CHEESE Mascarpone
  • 2/3 cup thickened cream
  • 1/3 cup Frangelico liqueur
  • 2 tablespoons vanilla sugar
  • 2 eggs, separated
  • Pinch salt
  • Biscotti, for serving, optional
  1. In a large bowl whisk together the Mascarpone, cream, liqueur, sugar and egg yolks until smooth and combined.
  2. In a separate bowl whisk the egg whites and salt just to stiff peaks. Gently fold the whites through the Mascarpone mixture and then spoon into serving glasses. Serve with biscotti if desired.

Note: Consider skipping coffee at the end of your meal and instead have one of these heavenly mousses! Tip: using thickened cream makes a softly set mousse. For a firmer dessert add a little dissolved gelatine to the Mascarpone mixture. Serves 6-8.
