Bocconcini Pasta Salad

Floridia Bocconcini, Fiore di latte, Ovolini and Pearls are natural cheeses made from fresh pasteurized cow’s milk. Made from Mozzarella (pasta filata) are available in various sizes depending on your preference. White in colour, semi-soft, rindless and unripened they are packed in tubs filled with brine. These bite-sized cheeses have a refreshingly delicate and creamy aroma with an elastic texture and consistency. Best consumed fresh, Italians enjoy drizzling with Extra Virgin Olive, as a centrepiece in salads or sliced on a pizza.

Ingredients
  • 150g cherry tomatoes
  • 1 cup loosely packed basil leaves
  • 2 cloves garlic
  • ¼ cup extra virgin olive oil
  • Salt and pepper, to taste
  • 250g farfalle pasta, cooked until al dente and drain
  • 300g green beans, cooked until just tender and drained
  • 200g tub FLORIDIA CHEESE Bocconcini or Pearls, drained
  • ¼ cup pine nuts, toasted
Method
  1. On a board roughly chop together the tomatoes, basil and garlic.
  2. Transfer to a large bowl and stir in the olive oil and seasonings.
  3. Add the still warm pasta and beans and toss to combine.
  4. Add the Bocconcini, torn into smaller pieces, or Pearls and then tumble salad onto a serving platter. Scatter over pine nuts.
